Experimental cookies finally turned out!
Egg-free, nut-free, grain-free coconut flour cookies
1/4C coconut flour
3tbsp chia seed meal (i.e. chia seeds ground up in the coffee grinder) + 9tbsp warm water
1/4C coconut oil, melted
3tbsp maple syrup (more if you like things sweeter)
1tbsp cinnamon
1/4 tsp sea salt
In a small bowl, mix chia meal and watwe, stir and let gel. Set aside.
Mix maple syrup and coconut oil. Add chia gel. Add coconut flour, cinnamon & salt.
You should get a fairly workable dough at this point. I scooped out cookies with a 1/2tbsp measuring spoon. I rolled the dough into balls and then flattened them on the cookie sheet. I got ~28 cookies out of my batch.
Bake at 350*F for oh... I lost track of time. Maybe 30-45-60 minutes? Check on them and see. I used a silicon baking mat on a cookie sheet. Once they were browned on the bottom and sort of firm on the edges I brought them out to cool on a wire rack. I think if you use parchment paper your baking time will be different anyway.

I came across this because I was looking for a grain-free nut-free flour blend. Sounds like the cookies would be tasty, but for one little detail - coconut is a nut!! (Especially as far as nut allergies go - coconut can kill my nut-allergic son.)
ReplyDeleteper my allergist, it is not a nut. we have nut allergies and avoid all nuts (even the ones we are not allergic to, due to xcon). we were not told we had to avoid coconut...
ReplyDeletei should clarify: not a nut to be lumped into the tree nut category along with all the others. there is little evidence of cross-reactivity to tree nuts. the FDA considers it a nut for food labeling purposes, though, so that might be confusing.
